Recipe : Strawberry Vanilla Muffins
I made these sweet looking muffins a few months ago actually, with some strawberries that I bought from Cold Storage (I think they were Driscolls), and some vanilla beans that hubby and I found in Bali.
I noticed that professional chefs uses vanilla straight from the pods to flavour their foods, so I gave this a try. Turned out that strawberries and vanillas are rather friendly combination; the smell and the texture are irresistible. The taste though, could be nicer if I made it sweeter.

P/S: I am not sure where to get vanilla pods in Malaysia, anyone of you know where? Or maybe if you could not find one, you can always use vanilla essence. Improvising is fun!
Ingredients:
¼ cup oil
½ cup milk
1 egg
1 tsp salt
2 tsp baking powder
½ cup white sugar (I’d recommend a bit more if the strawberries are sour)
1 ¾ cups white flour
1 cup chopped strawberries
1 vanilla pod (scrape the seeds out, keep the pod in your sugar to make it vanilla scented)
Instructions:
1) Preheat oven to 190 degrees C oil an 8 cup muffin tin. Line them with the muffin liners.
2) In a small bowl, combine oil, milk, egg and vanilla seeds. Beat lightly.
3) In a large bowl, mix flour, salt, baking powder and sugar. Toss in chopped strawberries and stir to coat with flour. Pour in milk mixture and stir together.
4) Fill muffin cups. 190 degrees C for 25 minutes or until the tops bounce back from the touch. Cool 10 minutes and remove from pans.
